Are you someone who is a vegan and loves your nut milks and nut butters. With the growing awareness of vegan food one is always looking to source and store plant based milks, cheese and butters which are sometimes not to be found on shelves and even if they are stock out easily. Plus speaking of store bought plant based supplies I have to be honest as a beginner it saved me a lot of time by using them in smoothies, salads, toasts etc. One thing was missing though the rawness and the absolute nuttiness in the flavour. At times it felt great and at times it felt thin and synthetic in my mouth. At first I would just pick up these up because I was excited to try something new later on though when I payed more close attention and turned the back of the packets to read, I was surprised to see the number of ingredients present especially speaking of almond milk of which almond was only 3%. I guess the understanding that I have come to develop now is eat clean and eat mindful. Some brands are doing this and they are doing great.
Coming to plant based butter I had only tried lotus biscoff butter and a genuinely amazing mix of water, cashew, coconut oil and a few more healthy ingredient based butter from Grabenord which looks, tastes, smells and even melts just like regular butter. When I ran out of it I started using olive oil in my food. Last week however I was in the mood to create a small batch of almond butter at home. Trust me this recipe literally takes only 5 minutes.

Ingredients needed
Dry Almonds (plain and unsalted)
A pinch of seasalt
Coconut oil
Tools needed
A mixer
A non stick pan
Step 1 : In a bowl add 2 cups of almonds. Take a pan and set it on medium flame. Add the almonds to it and dry roast them for 5 minutes. Simply set a timer for 5 minutes to be sure of when they are done, this tip works so well and have saved me from getting my almonds burnt many times before phew ! 😅 Once they are hot and golden 💛 transfer them to a bowl and let it cool for 1 min. Don't touch just yet 😅

Step 2 : It's time to plug in your mixer now. A mixer is your best bet as it will help grind it even and fine. Highly recommend this 🙏 Set aside some almonds in another bowl separately (5-6) and add the remaining to the mixer. Now switch it on and blend them at a medium to high speed until you get a good thick paste. Now add 1 tbsp of coconut oil and 1/4 tsp seasalt. Blend it again for 3-4 mins until you get a good paste. Ta-da your creamy nut butter is now ready.
Take a jar with a tight lid and transfer your butter in it. Seal it well and store it in your fridge for a week.
Use it as a spread for your breads or use it in your salads. I also recently used it for a biscuit crumb just simply take a few lotus biscoff vegan biscuits. Add them to a ziplock and flatten it up and break it with a rolling pin, this was so so so satisfying ! Take almond butter in a bowl and heat it in the microwave for one minute. Take this hot butter and mix it in your crumb well.
