Vegan Beet Sauce Pasta !!!


I am sure around the release of the "Barbie" movie we came across this barbie sauce pasta as the pink fever had clearly been rising from outfits, accessories to even dishes and meals. An eye catching beauty is this pasta that is sure to be the dish that everyone is going to talk about at your scrumptious dinners for friends and families alike. While there are many versions with some combining red sauce and white sauce which gives it a more rosy colour this is one which I thought is so easily recreatable especially if you are a beginner in the vegan journey you should definitely give this vegan beet sauce pasta a try


Italian cuisine amazes me with its versatility. With hundreds of sauces and equally different shapes it always offers you something new and fresh.





Ingredients :


  • 2 boiled beets, chopped in small squares

  • A pinch of salt

  • Vegan Parmesan to taste (You can find one by urban platter at any nearby grocery stores)

  • 1 tbsp olive oil

  • 1 tbsp pasta water (make sure to boil your pasta with salt for 15 minutes)


In a blender, combine the boiled beets, a pinch of salt, vegan Parmesan, olive oil, and a splash of pasta water. Blend until smooth and creamy. Take this mix and then swirl it with your pasta. You can also add a drop of lemon to make it little more tangy, Finally top it off with vegan parmesan and a small flavour of fresh basil to finish it off


What I love about this recipe is the sweetness of the betroot that you can feel when you eat the pasta. It balances the rest of the flavours very well.
